Peanut Butter Chocolate Chip Cookies

This lovely recipe comes from The Great America Cookie Cookbook, which I got for Christmas one year. I love this recipe and have to admit I think I ate a dozen of these cookies the day I made them. Oops :)

Ingredients:
1/4 cup butter
1/4 cup shortening
1/2 Peanut Butter
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 egg
1 1/4 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
2 cups Chocolate Chips
Granulated sugar

Heat over 375.

Beat butter, shortening, peanut butter, brown sugar, 1/2 c granulated sugar, and egg in a large bowl until fluffy. Stir together flour, baking soda and baking powder; stir into butter mixture. Stir in chocolate chips.

Shape into 1-inch balls, place on ungreased cookie sheet. With fork dipped in granulated sugar flatten in criss-cross pattern.

Bake 9 to 11 mins, cool slightly and remove from cookie sheet.

Chicken and Cheese Lasagna Roll-Ups

I guess I will be the first one to post a recipe to this lovely blog of ours. I found this recipe on Pinterest and thought I would try it out. I figured it must have turned out pretty well if Ben said he wanted to eat this again for dinner sometime.


Ingredients:

3 cups chopped cooked chicken1/4 cup milk
1 cup Ricotta cheese1/8 teaspoon white pepper
1/4 cup crumbled feta cheese8 lasagna noodles, cooked and drained
1/4 cup grated Parmesan cheese2 cups Prego Spaghetti Sauce

In a medium bowl combine chicken, cheese, milk and pepper

Spread 1/2 cup of mixture onto each lasagna noodle, roll jelly-roll style

In a 9x13" baking dish spread 1 cup spaghetti sauce

Arrange Lasagna Rolls seam down in sauce

Top with remaining sauce

Cover

Bake at 375 for 30 mins

Serve with Parmesan Cheese if desired
